Hi Rory, while it's not possible to set up a default email template for a contact at present you can set a default currency & branding theme.
This might go some way toward helping you communicate with contacts in different locations. 🙂 - See our help article here

Thanks for sharing your idea, and sharing how an invoice report which includes the account, date paid, method of payment would be useful, Donald.

Yes please totally agree to have this implemented as we have clients wanting this feature
Can there be different email template be setup under the client/contact area just like they have invoice branding? What this means is when you send the invoice or statement, the template will get picked up depending on the type of client (Invoice template Theme say Direct Debit etc) and they can just be sent without spending hour finding different types of clients when sending the statements.
